Charcut Roast House in Calgary is now in its fourth year, and after Kyle gave rave reviews on Charcut’s set menu lunch, we jumped at the opportunity to sit down with owners Connie DeSousa and John Jackson. The two are also head chefs at the restaurant, both who’ve been working in the industry for over a decade. With experience at top spots in both New York and San Francisco, DeSousa and Jackson have a wealth of knowledge when it comes to sourcing local ingredients to make great-tasting meals, as well as tips on cooking up dishes at home.
