Considering the many people that come in for a lunch break from work are pressed for time, head chefs and owners Connie DeSousa and John Jackson make a promise to all visitors: the entire experience can be completed in 45 minutes. This is what gives Charcut’s lunch service an edge: efficiency combined with high-quality food.

Kyle and I visited Charcut Roast House in Calgary on a recent trip, and aside from sitting down for an interview with Jackson and DeSousa, we also came in to put their promise to the test. Our food was delivered with speed, however we did not feel as if it was rushed. One concern I had before sitting down was whether or not the quality could be maintained with such pressure on timing, but the duo have this strategy down to a tee, and it showed.

The Philly Cheese Steak Sandwich and Cream of Potato Soup was delivered piping hot and dripping with flavour. While I was unable to eat the cookies after devouring the amazing meal, I fully appreciated saving them for later on in the day. As Jackson states in his interview, the aim with Charcut is to keep the experience going upon leaving the restaurant, a tactic that is executed to perfection with cookies ideal to quench any late afternoon peckish tendencies.
